For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 2 cups fresh peaches, peeled and diced

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, cream butter until smooth. Add eggs one at a time, then vanilla. Alternate adding dry ingredients and buttermilk, mixing until just combined.
  4. Fold in diced peaches gently. Pour batter into prepared pan.
  5. Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool before serving.
