For the Crust:
2 cups all-purpose flour
1 cup granulated sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
2 large eggs
1 tsp vanilla extract
1 cup buttermilk
2 cups fresh peaches, peeled and diced
Instructions
1. Prepare the Crust:
Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In another bowl, cream butter until smooth. Add eggs one at a time, then vanilla. Alternate adding dry ingredients and buttermilk, mixing until just combined.
Fold in diced peaches gently. Pour batter into prepared pan.
Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool before serving.
