For the Crust:
2 cups cooked chicken, shredded
4 ears of corn, husked
8 small corn tortillas
1/2 cup mayonnaise
1/2 cup sour cream
1 lime, juiced
1 tsp chili powder
1/2 tsp smoked paprika
1/4 cup cotija cheese, crumbled
1/4 cup fresh cilantro, chopped
1 clove garlic, minced
Salt and pepper to taste
Instructions
1. Prepare the Crust:
Preheat grill or grill pan over medium-high heat. Grill corn, turning occasionally, until charred in spots (about 10 minutes). Let cool slightly, then cut kernels off cobs.
In a bowl, mix mayonnaise, sour cream, lime juice, garlic, chili powder, smoked paprika, salt, and pepper to make the sauce.
Warm tortillas according to package instructions. Assemble tacos by layering chicken, grilled corn, sauce, cotija cheese, and cilantro.
