Street Corn Chicken Tacos

A delicious fusion of Mexican street corn and tender chicken in a taco, topped with creamy sauce and fresh garnishes.

For the Crust:

  • 2 cups cooked chicken, shredded
  • 4 ears of corn, grilled and kernels removed
  • 8 small corn tortillas
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1 lime, juiced
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 cup fresh cilantro, chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a bowl, mix mayonnaise, sour cream, lime juice, garlic, chili powder, smoked paprika, salt, and pepper to make the sauce.
  2. In another bowl, combine shredded chicken and grilled corn kernels. Toss with half of the sauce.
  3. Warm the tortillas on a skillet or grill for about 30 seconds per side.
  4. Fill each tortilla with the chicken and corn mixture. Drizzle with remaining sauce and sprinkle with cotija cheese and cilantro.
  5. Serve immediately with extra lime wedges if desired.
