For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 cup fresh strawberries, diced
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease an 8-inch square baking pan.
- In a bowl, mix flour, sugar, baking powder, baking soda, and salt. Cut in cold butter until mixture resembles coarse crumbs. Reserve 1/2 cup for topping.
- In another bowl, whisk egg, buttermilk, and vanilla. Stir into the remaining flour mixture until just combined. Spread batter into the prepared pan.
- Beat cream cheese and sugar until smooth. Spread over the batter. Scatter diced strawberries on top.
- Sprinkle reserved crumb mixture over the strawberries. Bake for 30-35 minutes or until golden and set.
- Cool before slicing and serving.
