For the Crust:
1.5 lbs boneless, skinless chicken breasts (cut into bite-sized pieces)
1/4 cup bourbon
1/3 cup brown sugar
2 tbsp soy sauce
1 tbsp Dijon mustard
2 cloves garlic (minced)
1 tsp smoked paprika
1/2 tsp black pepper
1 tbsp olive oil
1 tbsp cornstarch (optional, for thickening)
2 tbsp water (optional, for slurry)
Instructions
1. Prepare the Crust:
In a bowl, whisk together bourbon, brown sugar, soy sauce, Dijon mustard, garlic, smoked paprika, and black pepper to make the glaze.
Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned on all sides, about 5-6 minutes.
Pour the glaze over the chicken, reduce heat to medium, and simmer for 10-12 minutes, stirring occasionally, until chicken is cooked through and glaze thickens.
If a thicker glaze is desired, mix cornstarch and water to make a slurry, then stir into the skillet and cook for 1-2 more minutes.
Serve warm, garnished with sesame seeds or green onions if desired.
