For the Crust:
- 1 cup uncooked white rice
- 2 cups water
- 1 tbsp olive oil
- 12 oz smoked sausage, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups fresh spinach
- 1 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
Instructions
1. Prepare the Crust:
- Cook rice according to package instructions using the 2 cups water.
- Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned, about 5 minutes.
- Add onion and garlic to the skillet. Cook until softened, about 3 minutes.
- Stir in spinach, paprika, black pepper, and salt. Cook until spinach wilts, about 2 minutes.
- Combine the sausage mixture with the cooked rice. Stir well to combine and serve warm.
