For the Crust:
- 1 lb Italian sausage, casings removed
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 2 (15 oz) cans white beans, drained and rinsed
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 cups fresh spinach
- 1 tbsp olive oil
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it into crumbles.
- Add onion, carrots, and celery. Cook until vegetables soften, about 5 minutes.
- Stir in garlic, thyme, and rosemary. Cook for 1 minute until fragrant.
- Pour in chicken broth and add white beans. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
- Serve hot with crusty bread if desired.
