Rich & Fudgy Triple Chocolate Cheesecake

An indulgent, creamy cheesecake with three layers of chocolate – dark chocolate crust, milk chocolate filling, and white chocolate ganache topping.

For the Crust:

  • 2 cups chocolate cookie crumbs
  • 1/2 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 8 oz milk chocolate, melted and cooled
  • 4 oz dark chocolate, melted and cooled
  • 6 oz white chocolate chips
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1/4 cup cocoa powder

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Mix cookie crumbs with melted butter and press into 9-inch springform pan.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream and vanilla.
  3. Divide batter into three portions. Mix one portion with dark chocolate, one with milk chocolate, and leave one plain.
  4. Layer batters in pan, swirling gently with knife. Bake for 55-60 minutes until edges are set but center jiggles slightly.
  5. Cool completely, then refrigerate for at least 4 hours. Heat cream and pour over white chocolate chips, stir until smooth for ganache topping.
