Ranch Taco Soup

A hearty and flavorful soup combining the best of tacos and ranch dressing for a comforting meal.

For the Crust:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 packet ranch dressing mix
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Tortilla chips for serving

Instructions

1. Prepare the Crust:

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add taco seasoning and ranch dressing mix to the beef, stirring to combine.
  3. Pour in black beans, corn, diced tomatoes, and chicken broth. Stir well.
  4. Bring the soup to a boil, then reduce heat and simmer for 20 minutes.
  5. Serve hot, topped with shredded cheddar cheese, a dollop of sour cream, and tortilla chips.
