Pineapple Coconut Glow Ice Cream

A tropical, creamy, and refreshing no-churn ice cream with sweet pineapple and rich coconut.

For the Crust:

  • 2 cups heavy cream, chilled
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup crushed pineapple, drained
  • 1/2 cup coconut cream
  • 1 tsp vanilla extract
  • 1/2 cup toasted coconut flakes
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. In a large bowl, whip the heavy cream until stiff peaks form.
  2. Gently fold in the sweetened condensed milk, crushed pineapple, coconut cream, vanilla extract, and salt until fully combined.
  3. Pour the mixture into a loaf pan or airtight container, sprinkle with toasted coconut flakes, and freeze for at least 6 hours or until firm.
  4. Scoop and serve chilled.
