For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup crushed pineapple, drained
- 1/2 cup coconut milk
- 1 tsp vanilla extract
- 1/2 cup shredded coconut
- 1/4 cup pineapple juice
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Mix graham cracker crumbs with melted butter and press into a 9-inch springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition.
- Stir in crushed pineapple, coconut milk, vanilla extract, and pineapple juice until well combined.
- Pour filling over crust and sprinkle shredded coconut on top.
- Bake for 50-55 minutes or until center is almost set. Cool completely before refrigerating for at least 4 hours.
