Peach Crumble Cheesecake

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups fresh peaches, peeled and diced
  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup cold butter, cubed
  • 1 tsp cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter and press into a 9-inch springform pan.
  2. Beat cream cheese and granulated sugar until smooth. Add eggs one at a time, then vanilla. Pour over crust.
  3. In a bowl, combine flour, oats, brown sugar, cinnamon, and cold butter. Rub with fingers until crumbly.
  4. Sprinkle diced peaches over cheesecake batter, then top with crumble mixture.
  5. Bake for 45-50 minutes until set. Cool completely before refrigerating for at least 4 hours.
