One Pot Shrimp and Creamy Garlic Tortellini

A quick and delicious one-pot meal featuring succulent shrimp and cheese-filled tortellini in a creamy garlic sauce.

For the Crust:

  • 1 lb large shrimp, peeled and deveined
  • 9 oz cheese tortellini
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. In a large pot, heat olive oil and butter over medium heat. Add shrimp and cook until pink, about 2-3 minutes per side. Remove and set aside.
  2. In the same pot, add minced garlic and sauté for 30 seconds until fragrant.
  3. Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer.
  4. Add tortellini and Italian seasoning. Cook for 5-7 minutes until tortellini is tender.
  5. Stir in parmesan cheese until melted and sauce thickens.
  6. Return shrimp to the pot and stir to combine. Season with salt and pepper to taste.
  7. Garnish with fresh parsley before serving.
