One-Pot Creamy Tuscan Sausage Gnocchi

A rich and creamy one-pot dish featuring Italian sausage, gnocchi, and sun-dried tomatoes in a garlicky Parmesan sauce.

For the Crust:

  • 1 lb Italian sausage, casings removed
  • 1 lb potato gnocchi
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 2 cups baby spinach
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large skillet, brown the Italian sausage over medium heat, breaking it into crumbles.
  2. Add minced garlic and sun-dried tomatoes, sauté for 1-2 minutes until fragrant.
  3. Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer.
  4. Add gnocchi and Italian seasoning. Cover and cook for 5 minutes, stirring occasionally.
  5. Stir in baby spinach and Parmesan cheese until spinach wilts and cheese melts.
  6. Season with salt and pepper to taste. Serve immediately.
