One-Pot Creamy Dill Pickle Chicken & Pasta Skillet

For the Crust:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 8 oz pasta (penne or rotini)
  • 1 cup dill pickles, chopped
  • 1/2 cup pickle juice
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tsp dried dill
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup shredded cheddar cheese

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned, about 5-7 minutes.
  2. Add garlic and cook for 1 minute until fragrant. Stir in pickle juice, chicken broth, and dried dill.
  3. Add pasta to the skillet, ensuring it’s submerged in the liquid. Bring to a boil, then reduce heat and simmer for 12-15 minutes until pasta is tender.
  4. Stir in heavy cream and chopped pickles. Cook for 2-3 minutes until sauce thickens slightly.
  5. Sprinkle with cheddar cheese, cover, and let melt for 1-2 minutes before serving.
