Ground Turkey Sweet Potato Bake
- 1 pound ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup chicken broth
- 1 cup shredded cheese (cheddar or your choice)
- 2 tablespoons olive oil
- Fresh parsley for garnish
- Step 1 Preheat the oven , Set your oven to 400°F (200°C) to ensure it's hot and ready for baking.
- Step 2 Sauté onions and garlic , In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes. The aroma will fill your kitchen.
- Step 3 Brown the turkey , Add the 1 pound of ground turkey to the skillet. Break it apart with a spoon and cook until it's browned, which should take about 5-7 minutes. Make sure there are no pink spots left.
- Step 4 Add vegetables and spices , Stir in the diced sweet potatoes, chopped bell pepper, 1 teaspoon of paprika, 1 teaspoon of cumin, and season with salt and pepper to taste. Mix well to combine all ingredients.
- Step 5 Simmer with broth , Pour in 1 cup of chicken broth and bring the mixture to a simmer. Cook for an additional 10 minutes, allowing the sweet potatoes to soften slightly while absorbing the flavors.
- Step 6 Transfer to baking dish , Carefully transfer the turkey and vegetable mixture to a baking dish. Spread it evenly across the bottom.
- Step 7 Add cheese , Top the mixture with 1 cup of shredded cheese of your choice, ensuring it covers the entire surface for a gooey finish.
- Step 8 Bake , Place the baking dish in the preheated oven and bake for 25-30 minutes. Look for the cheese to become bubbly and golden, and ensure the sweet potatoes are tender by piercing them with a fork.
- Step 9 Garnish and serve , Once done, remove the dish from the oven and let it cool slightly. Garnish with fresh parsley before serving to add a touch of color.
