For the Crust:
- 2 cups shortbread cookie crumbs
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 1/2 cup caramel sauce
- 1/2 cup chocolate chips, melted
- 1/4 cup chopped Twix bars for garnish
Instructions
1. Prepare the Crust:
- In a bowl, mix the cookie crumbs and melted butter until combined. Press firmly into the bottom of a 9-inch springform pan.
- In a large bowl, beat the cream cheese, powdered sugar, and vanilla until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Spread half of the cheesecake mixture over the crust. Drizzle with caramel sauce, then top with the remaining cheesecake mixture.
- Refrigerate for at least 4 hours or until set. Drizzle with melted chocolate and garnish with chopped Twix bars before serving.
