No-Bake Berry Cheesecake

A creamy and refreshing no-bake cheesecake topped with fresh berries.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 1/4 cup berry jam (for glaze)

Instructions

1. Prepare the Crust:

  1. Mix graham cracker crumbs and melted butter in a bowl. Press firmly into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat cream cheese, sugar, and vanilla until smooth.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
  4. Spread the cheesecake filling over the crust and smooth the top. Refrigerate for at least 4 hours or until set.
  5. Before serving, arrange fresh berries on top. Warm the berry jam slightly and drizzle over the berries for a glaze.

Notes

You can customize the seasonings to taste.
