Mini Peanut Butter Cheesecakes with Caramel Drizzle

Delicious mini cheesecakes with a rich peanut butter flavor and a sweet caramel drizzle.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup caramel sauce

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Line a muffin tin with paper liners.
  2. Mix graham cracker crumbs and melted butter. Press 1 tablespoon into each liner to form the crust.
  3. In a bowl, beat cream cheese, peanut butter, and sugar until smooth. Add eggs one at a time, then vanilla.
  4. Divide the filling evenly among the crusts. Bake for 20-25 minutes until set.
  5. Let cool, then refrigerate for at least 2 hours. Drizzle with caramel sauce before serving.
