For the Crust:
- 2 cups elbow macaroni, cooked and cooled
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Prepare the Crust:
- In a large bowl, combine the cooked macaroni, black beans, corn, red bell pepper, red onion, and cilantro.
- In a separate small bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, cumin, salt, and black pepper.
- Pour the dressing over the macaroni mixture and toss until evenly coated. Refrigerate for at least 1 hour before serving to allow flavors to meld.
