Meatloaf Grilled Cheese Melt

A delicious twist on classic grilled cheese, featuring savory meatloaf slices and melted cheese between crispy golden bread.

For the Crust:

  • 8 slices of bread (sourdough or white)
  • 4 slices of cooked meatloaf (about 1/2 inch thick)
  • 8 slices of cheddar cheese
  • 2 tablespoons butter (softened)
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard (optional)

Instructions

1. Prepare the Crust:

  1. Spread butter on one side of each bread slice. On the unbuttered side of 4 slices, spread a thin layer of mayonnaise and Dijon mustard (if using).
  2. Place one slice of cheese on each of the 4 prepared bread slices, followed by a slice of meatloaf and another slice of cheese. Top with the remaining bread slices, buttered side out.
  3. Heat a skillet over medium heat. Cook each sandwich for 3-4 minutes per side, pressing down lightly, until the bread is golden brown and the cheese is melted. Serve warm.
