For the Crust:
8 slices of bread (sourdough or white)
4 slices of cooked meatloaf (about 1/2 inch thick)
8 slices of cheddar cheese
2 tablespoons butter (softened)
1 tablespoon mayonnaise
1 teaspoon Dijon mustard (optional)
Instructions
1. Prepare the Crust:
Spread butter on one side of each bread slice. On the unbuttered side of 4 slices, spread a thin layer of mayonnaise and Dijon mustard (if using).
Place one slice of cheese on each of the 4 prepared bread slices, followed by a slice of meatloaf and another slice of cheese. Top with the remaining bread slices, buttered side out.
Heat a skillet over medium heat. Cook each sandwich for 3-4 minutes per side, pressing down lightly, until the bread is golden brown and the cheese is melted. Serve warm.
