Loaded Cheddar Bacon Mashed Potato Bake

Creamy mashed potatoes loaded with cheddar cheese, crispy bacon, and green onions, baked to golden perfection.

For the Crust:

  • 4 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/4 cup sour cream
  • 2 tbsp butter
  • 1/4 cup chopped green onions
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a large bowl, mix mashed potatoes, sour cream, butter, garlic powder, salt, and pepper until well combined.
  3. Fold in half of the shredded cheddar cheese, half of the crumbled bacon, and half of the chopped green onions.
  4. Spread the mixture evenly into the prepared baking dish. Top with remaining cheddar cheese.
  5. Bake for 20-25 minutes or until the cheese is melted and bubbly.
  6. Remove from oven and sprinkle with remaining bacon and green onions. Serve warm.
