Loaded Cauliflower “Mac” & Cheese Casserole

A low-carb twist on classic mac and cheese, featuring tender cauliflower smothered in a rich cheese sauce and topped with crispy bacon and green onions.

For the Crust:

  • 1 large head cauliflower, cut into florets
  • 2 cups shredded cheddar cheese
  • 1/2 cup heavy cream
  • 4 oz cream cheese, softened
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 6 slices bacon, cooked and crumbled
  • 2 green onions, sliced

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Steam cauliflower florets until tender, about 8-10 minutes. Drain well and transfer to the baking dish.
  3. In a saucepan over medium heat, combine heavy cream, cream cheese, cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper. Stir until smooth and fully melted.
  4. Pour cheese sauce over cauliflower and stir gently to coat.
  5. Bake for 20 minutes, then top with crumbled bacon and green onions. Bake for an additional 5 minutes.
  6. Let cool slightly before serving.

Notes

You can customize the seasonings to taste.
