For the Crust:
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 2 tbsp limoncello liqueur
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 tsp salt
- 1/2 cup raspberry jam
- Powdered sugar for dusting (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, limoncello, and vanilla.
- Gradually mix in flour and salt until dough forms. Roll dough into 1-inch balls and place on baking sheets.
- Use your thumb or a spoon to make an indentation in the center of each cookie. Fill with 1/2 tsp raspberry jam.
- Bake for 12-14 minutes until edges are lightly golden. Cool on wire racks. Dust with powdered sugar if desired.
