For the Crust:
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp lemon zest
- 1 cup fresh raspberries
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix milk, oil, egg, vanilla, and lemon zest until combined.
- Pour wet ingredients into dry ingredients and stir until just combined. Fold in raspberries gently.
- Divide batter evenly among muffin cups, filling each about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean. Cool before serving.
