Lemon Raspberry Layered Pie

For the Crust:

  • 1 9-inch graham cracker crust
  • 1 cup fresh raspberries
  • 1 14-oz can sweetened condensed milk
  • 1/2 cup lemon juice
  • 1 tsp lemon zest
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. In a bowl, mix sweetened condensed milk, lemon juice, and lemon zest until smooth.
  2. Pour the lemon mixture into the graham cracker crust and spread evenly.
  3. In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  4. Gently spread the whipped cream over the lemon layer.
  5. Top with fresh raspberries and refrigerate for at least 4 hours or until set.
