For the Crust:
- 1 cup all-purpose flour
- 1/2 cup shredded coconut
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In another bowl, cream together butter and sugar until light and fluffy. Beat in the egg, lemon zest, and lemon juice.
- Gradually mix in the dry ingredients until just combined. Fold in the shredded coconut.
- Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes or until edges are lightly golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
