Indulge in Rich Mocha Ice Cream Cake with Chocolate Drizzle

For the Crust:

  • 1 box chocolate cake mix
  • 1 pint coffee ice cream, softened
  • 1 pint chocolate ice cream, softened
  • 1 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips
  • 1 tbsp instant coffee granules
  • Whipped cream for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Prepare the chocolate cake according to package instructions and let it cool completely.
  2. In a springform pan, layer half of the chocolate cake as the base. Spread the softened coffee ice cream evenly over the cake layer.
  3. Add the remaining cake layer on top, then spread the chocolate ice cream evenly. Freeze for at least 4 hours or until firm.
  4. For the drizzle, heat the heavy cream until warm, then mix in chocolate chips and coffee granules until smooth. Let it cool slightly.
  5. Drizzle the chocolate sauce over the frozen cake before serving. Garnish with whipped cream if desired.
