Honey Pineapple Chicken

A sweet and tangy chicken dish with honey-glazed pineapple for a tropical twist.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together honey, soy sauce, garlic, ginger, and red pepper flakes.
  2. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook chicken until golden brown, about 5 minutes per side.
  3. Add pineapple chunks to the skillet and pour the honey sauce over the chicken. Simmer for 10-12 minutes, basting occasionally, until chicken is cooked through and sauce thickens.
  4. Garnish with sliced green onions and serve hot over rice or with a side of vegetables.
