For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned)
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
1. Prepare the Crust:
- In a bowl, whisk together honey, soy sauce, garlic, ginger, and red pepper flakes.
- Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook chicken until golden brown, about 5 minutes per side.
- Add pineapple chunks to the skillet and pour the honey sauce over the chicken. Simmer for 10-12 minutes, basting occasionally, until chicken is cooked through and sauce thickens.
- Garnish with sliced green onions and serve hot over rice or with a side of vegetables.
