Homemade Taco Bell Enchirito

A delicious copycat of the classic Taco Bell Enchirito, featuring a soft tortilla filled with seasoned beef, beans, and cheese, topped with red sauce and more cheese.

For the Crust:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup refried beans
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup red enchilada sauce
  • 1/2 cup diced onions
  • 1/4 cup sliced black olives

Instructions

1. Prepare the Crust:

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat and stir in taco seasoning and water as directed on the packet.
  2. Warm the refried beans in a small saucepan or microwave until spreadable.
  3. Spread a layer of beans on each tortilla, then top with seasoned beef and a sprinkle of cheese. Roll the tortillas tightly and place seam-side down in a baking dish.
  4. Pour enchilada sauce over the rolled tortillas, then sprinkle with remaining cheese, onions, and olives.
  5. Bake at 350°F for 15-20 minutes until cheese is melted and bubbly.
