Homemade Taco Bell Enchirito

A delicious copycat recipe of Taco Bell’s Enchirito, featuring a soft tortilla filled with seasoned beef, beans, and cheese, smothered in red sauce.

For the Crust:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can refried beans
  • 6 small flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 can red enchilada sauce
  • 1/2 cup diced onions
  • 1/4 cup sliced black olives

Instructions

1. Prepare the Crust:

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  2. Add taco seasoning and water to the beef. Simmer for 5 minutes.
  3. Warm the refried beans in a separate pan or microwave.
  4. Spread a layer of beans on each tortilla, then add a portion of the seasoned beef. Roll the tortillas tightly and place seam-side down in a baking dish.
  5. Pour enchilada sauce over the rolled tortillas, covering them completely.
  6. Sprinkle shredded cheese, diced onions, and black olives on top.
  7. Bake at 350°F for 15-20 minutes, or until cheese is melted and bubbly.
