For the Crust:
2 cups fresh peaches, peeled and diced
1 cup granulated sugar
1 tablespoon lemon juice
2 cups heavy cream
1 cup whole milk
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
1. Prepare the Crust:
In a bowl, combine diced peaches, 1/4 cup sugar, and lemon juice. Let sit for 30 minutes to macerate.
In a separate bowl, whisk together remaining sugar, heavy cream, milk, vanilla extract, and salt until sugar is dissolved.
Mash half of the peaches and stir into the cream mixture. Pour into an ice cream maker and churn according to manufacturer’s instructions.
During the last 5 minutes of churning, add the remaining diced peaches. Transfer to a freezer-safe container and freeze for at least 4 hours before serving.
