For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 teaspoon salt
- 2 large eggs
- 3/4 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 cup fresh blueberries
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
- In a bowl, mix 1 1/2 cups flour, 1/2 cup sugar, and salt. Cut in the butter until crumbly. Press into the prepared pan.
- Bake crust for 15 minutes or until lightly golden.
- Whisk eggs, 3/4 cup sugar, 1/4 cup flour, lemon juice, and zest until smooth. Gently fold in blueberries.
- Pour filling over the baked crust. Bake for 20-25 minutes or until set.
- Cool completely before cutting into bars.
