Homemade Lemon Blueberry Bars

Delicious and tangy lemon blueberry bars with a buttery crust and fruity filling.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 teaspoon salt
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
  2. In a bowl, mix 1 1/2 cups flour, 1/2 cup sugar, and salt. Cut in the butter until crumbly. Press into the prepared pan.
  3. Bake crust for 15 minutes or until lightly golden.
  4. Whisk eggs, 3/4 cup sugar, 1/4 cup flour, lemon juice, and zest until smooth. Gently fold in blueberries.
  5. Pour filling over the baked crust. Bake for 20-25 minutes or until set.
  6. Cool completely before cutting into bars.
