For the Crust:
- 1 lb ground beef
- 2 medium sweet potatoes, diced
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, garlic powder, paprika, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
- In a skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it into crumbles. Season with salt and pepper to taste.
- Assemble the bowls by dividing the roasted sweet potatoes and ground beef among four bowls. Top with avocado slices, chopped cilantro, and a lime wedge for squeezing.
