For the Crust:
- 2 lbs Yukon Gold potatoes, thinly sliced
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 2 tbsp fresh thyme leaves
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup grated Parmesan cheese
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a round baking dish.
- In a large bowl, toss potato slices with olive oil, balsamic vinegar, thyme, salt, and pepper.
- Layer the potato slices in the baking dish, sprinkling Parmesan cheese between layers. Repeat until all potatoes are used.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 5-10 minutes until golden and tender.
- Let cool slightly before slicing and serving.
