Golden Potato and Balsamic Torte with Fresh Thyme

A savory and elegant layered potato dish with a hint of balsamic and fresh thyme.

For the Crust:

  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp fresh thyme leaves
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a round baking dish.
  2. In a large bowl, toss potato slices with olive oil, balsamic vinegar, thyme, salt, and pepper.
  3. Layer the potato slices in the baking dish, sprinkling Parmesan cheese between layers. Repeat until all potatoes are used.
  4. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 5-10 minutes until golden and tender.
  5. Let cool slightly before slicing and serving.
