Garlic Parmesan Roasted Potatoes

Crispy roasted potatoes tossed in garlic, parmesan, and herbs for a flavorful side dish.

For the Crust:

  • 2 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss potatoes with olive oil, garlic, rosemary, thyme, salt, and pepper until evenly coated.
  3. Spread potatoes in a single layer on the baking sheet. Roast for 25-30 minutes, flipping halfway, until golden and crispy.
  4. Sprinkle parmesan cheese over the potatoes and return to the oven for 2-3 minutes until melted.
  5. Garnish with fresh parsley before serving.

Notes
