For the Crust:
1 lb boneless, skinless chicken breasts, cubed
9 oz cheese tortellini
2 cups broccoli florets
3 cloves garlic, minced
1 cup heavy cream
1/2 cup grated parmesan cheese
2 tbsp butter
1 tbsp olive oil
1 tsp Italian seasoning
Salt and pepper to taste
Instructions
1. Prepare the Crust:
In a large skillet, heat olive oil over medium-high heat. Add chicken, season with salt, pepper, and Italian seasoning. Cook until golden and no longer pink, about 6-8 minutes. Remove and set aside.
In the same skillet, melt butter over medium heat. Add garlic and sauté for 30 seconds until fragrant.
Pour in heavy cream and bring to a simmer. Stir in parmesan cheese until melted and smooth. Add broccoli and tortellini, cover, and cook for 5-7 minutes until tortellini is tender and broccoli is crisp-tender.
Return chicken to the skillet, stir to combine, and cook for an additional 2 minutes. Serve warm.
