Garlic Butter Parmesan Shrimp Ramen Bowls

For the Crust:

  • 8 oz ramen noodles
  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp red pepper flakes
  • 1/4 cup chopped fresh parsley
  • 1 tbsp lemon juice
  • Salt and black pepper to taste
  • 2 cups chicken or vegetable broth
  • 1 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Cook ramen noodles according to package instructions, drain, and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add shrimp, season with salt and black pepper, and cook until pink (about 2-3 minutes per side). Remove shrimp and set aside.
  3. In the same skillet, melt butter over medium heat. Add garlic and red pepper flakes, sauté until fragrant (about 1 minute).
  4. Pour in chicken broth and bring to a simmer. Stir in parmesan cheese until melted.
  5. Add cooked ramen noodles and shrimp to the skillet, tossing to coat in the sauce. Stir in lemon juice and parsley.
  6. Serve hot, garnished with extra parmesan and parsley if desired.
