Fluffy Cottage Cheese Cloud Bread

A light and airy low-carb bread made with cottage cheese and eggs, perfect for sandwiches or as a snack.

For the Crust:

  • 3 large eggs, separated
  • 1/2 cup cottage cheese
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon dried herbs (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat egg whites and cream of tartar until stiff peaks form.
  3. In another bowl, blend egg yolks, cottage cheese, salt, and optional seasonings until smooth.
  4. Gently fold the yolk mixture into the beaten egg whites until just combined.
  5. Spoon the batter onto the baking sheet in 6 even mounds and bake for 25-30 minutes until golden.
  6. Let cool before serving.
