Fiesta Lime Chicken with Avocado Salsa

Juicy lime-marinated chicken topped with a fresh avocado salsa for a burst of flavor.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 3 limes, juiced and zested
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 2 avocados, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 1 tbsp lime juice

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together lime juice, lime zest, garlic, cumin, chili powder, salt, and olive oil. Add chicken and marinate for at least 30 minutes.
  2. Preheat grill or skillet over medium-high heat. Cook chicken for 6-7 minutes per side or until internal temperature reaches 165°F.
  3. In a separate bowl, combine avocados, red onion, cilantro, jalapeño, and lime juice to make the salsa.
  4. Serve chicken topped with avocado salsa.
