English Muffin Breakfast Pizza

A quick and delicious breakfast pizza made with English muffins, eggs, cheese, and bacon.

For the Crust:

  • 2 English muffins, split
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 1/4 cup diced bell peppers
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Place the English muffin halves on a baking sheet.
  2. In a skillet, melt butter over medium heat. Add diced bell peppers and sauté for 2-3 minutes.
  3. Whisk eggs with salt and black pepper. Pour into the skillet with bell peppers and scramble until just set.
  4. Spoon the scrambled eggs onto each English muffin half. Top with shredded cheese and crumbled bacon.
  5. Bake for 10-12 minutes, or until the cheese is melted and bubbly. Serve warm.
