English Muffin Breakfast Pizza

A quick and delicious breakfast pizza made with toasted English muffins, eggs, cheese, and bacon.

For the Crust:

  • 2 English muffins, split and toasted
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 1/4 cup diced bell peppers
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh chives

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Place toasted English muffin halves on a baking sheet.
  2. In a bowl, whisk eggs with salt and black pepper. Stir in diced bell peppers.
  3. Spoon the egg mixture evenly over each English muffin half.
  4. Sprinkle shredded cheddar cheese and crumbled bacon on top of the egg mixture.
  5. Bake for 12-15 minutes or until eggs are set and cheese is melted.
  6. Garnish with chopped fresh chives before serving.
