Decadent Chocolate Earthquake Cake

A deliciously messy masterpiece with layers of chocolate, cream cheese, and coconut that bakes into a gooey, cracked-top wonder.

For the Crust:

  • 1 box chocolate cake mix
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, melted
  • 3 3/4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan and sprinkle coconut and pecans evenly on the bottom.
  2. Prepare chocolate cake mix according to package directions and pour batter over the coconut and pecans.
  3. In a medium bowl, beat cream cheese, melted butter, powdered sugar, and vanilla until smooth. Drop spoonfuls over the cake batter.
  4. Bake for 40-45 minutes until the top is cracked and center is set. Let cool completely before serving.
