Decadent Carrot Cake Bars with Cream Cheese Frosting

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
  3. Add eggs, oil, grated carrots, and vanilla extract. Mix until well combined.
  4. Pour batter into prepared pan and bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.
  5. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
  6. Spread frosting over cooled bars. Cut into squares and serve.
