Creamy Tuscan Sausage & Spinach Tortellini Soup

A rich and comforting soup with Italian sausage, cheese tortellini, and fresh spinach in a creamy broth.

For the Crust:

  • 1 lb Italian sausage, casings removed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes
  • 9 oz cheese tortellini
  • 2 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese

Instructions

1. Prepare the Crust:

  1. Brown sausage in a large pot over medium heat, breaking it into small pieces. Drain excess fat.
  2. Add onion and garlic to the pot; sauté until softened, about 3 minutes.
  3. Stir in chicken broth, diced tomatoes, Italian seasoning, and red pepper flakes. Bring to a simmer.
  4. Add tortellini and cook according to package instructions (about 7-9 minutes).
  5. Stir in spinach until wilted, then add heavy cream and parmesan cheese. Simmer for 2 more minutes.
  6. Season with salt and pepper to taste before serving.
