Creamy Parmesan Italian Sausage Ditalini Soup

A rich and comforting soup with Italian sausage, tender ditalini pasta, and a creamy Parmesan broth.

For the Crust:

  • 1 lb Italian sausage, casings removed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup ditalini pasta, uncooked
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it into small pieces.
  2. Add diced onion and minced garlic. Sauté until onions are translucent.
  3. Pour in chicken broth and bring to a boil. Stir in ditalini pasta and cook according to package instructions until al dente.
  4. Reduce heat to low. Stir in heavy cream, Parmesan cheese, oregano, and basil. Simmer for 5 minutes until slightly thickened.
  5. Season with salt and pepper to taste. Serve hot.
