Creamy Dill Pickle Mac & Cheese with Crumbled Bacon

For the Crust:

  • 8 oz elbow macaroni
  • 4 slices bacon, cooked and crumbled
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped dill pickles
  • 1/4 cup pickle juice
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Cook macaroni according to package instructions, then drain and set aside.
  2. In a large saucepan, melt butter over medium heat. Whisk in flour to create a roux, cooking for 1-2 minutes until golden.
  3. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until thickened.
  4. Reduce heat to low and stir in cheddar cheese until fully melted and creamy.
  5. Add chopped pickles, pickle juice, garlic powder, black pepper, and salt. Stir to combine.
  6. Fold in cooked macaroni and half of the crumbled bacon. Mix well.
  7. Serve topped with remaining bacon crumbles.
