Cranberry Brie and Mozzarella Grilled Sandwich

A deliciously gooey grilled sandwich with the perfect balance of sweet cranberry and creamy cheeses.

For the Crust:

  • 8 slices sourdough bread
  • 4 oz brie cheese, sliced
  • 4 oz mozzarella cheese, sliced
  • 1/2 cup cranberry sauce
  • 2 tbsp butter, softened
  • 1 tsp fresh thyme leaves (optional)

Instructions

1. Prepare the Crust:

  1. Spread cranberry sauce on 4 slices of bread.
  2. Layer brie and mozzarella cheese on top of the cranberry sauce.
  3. Top with remaining bread slices and butter the outsides.
  4. Heat a skillet over medium heat and cook sandwiches for 3-4 minutes per side until golden brown and cheese is melted.
  5. Let rest for 1 minute before slicing and serving.
