Country French Garlic Soup

A rustic and aromatic garlic soup with a rich, comforting flavor.

For the Crust:

  • 2 heads of garlic, cloves peeled and minced
  • 4 cups chicken or vegetable broth
  • 1/4 cup olive oil
  • 1 large onion, finely chopped
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 4 slices crusty bread, toasted
  • 1/2 cup grated Gruyère cheese
  • 2 tablespoons chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until soft and fragrant, about 5 minutes.
  2. Pour in the broth, then add the thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Preheat the broiler. Ladle the soup into oven-safe bowls, top each with a slice of toasted bread and a sprinkle of Gruyère cheese.
  4. Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes. Garnish with fresh parsley before serving.
